Vanilla Cupcakes

No photos to go with this but thought I ought to put up some recipes while I remember. Anyone that works with, or has children, or even just loves to bake should have a simple cupcake recipe and this is one of the easiest. This supposedly makes approx. 15 regular cupcakes, or approx. 7 large (muffin case size) cupcakes.


Ingredients:

125g / 4 oz  unsalted butter (softened if time!)
125g / 4 oz  self-raising flour  (sifted if making by hand)
125g / 4 oz  caster sugar
2 eggs
1 tsp vanilla essence
2 tbsp milk (anything but skimmed - that's basically water).

Traditional method:

- Preheat oven to 180 degrees. I can't tell you this for a fact as everyone's oven is different. If you try this and they seem to brown very quickly on the top while still not fully cooked, turn the temp down next time.

- Line a muffin tin with cases

- Cream butter and sugar together with a wooden spoon in a large bowl.

- Add one egg at a time.

- Sift and fold the flour in gently with a metal spoon.

- add vanilla and milk and mix gently 'til everything is incorporated.

- Fill cases half full with mixture

 - Bake in the oven for 15 mins approx. Keep an eye on them, they're cooked when golden and springy to touch.


Super quick and easy method:


- Preheat the oven, and line a tray as before.

- Either repeat all the above steps but with a hand held electric whisk OR

- Put all the ingredients into a magimix and press on. When it looks like cake batter, pour into the cases and cook as above.
